What is it?
Manna-KN is a perfected kombucha that’s highly-fermented, low alcohol and tea-dense. With its high tea concentration and long fermentation time, Manna-KN is perfect for those who prefer the aromas and colour of black tea, and who want to avoid additional tea infusions when brewing kombucha.
Its ingredients are: Water, sugar, black tea and kombucha culture. That’s it!
Manna-KN can be stored at room temperature for 5 years because all the fermentable sugars have already been eaten up. Huzzah!
Why would I use it?
To simplify my life: just like Manna-K, there’s a lot Manna-KN can help with, but it all comes down to empowering *you* to make better kombucha in a faster and simpler way.
For a delicious, consistent and stable kombucha that doesn’t make bottles explode: Keep your product under control once it’s bottled. Manna-KN has very little yeast, limiting in-bottle fermentation: you can rest easy knowing that your customers will drink the kombucha you intended them to drink.
To reduce the alcohol in my kombucha: Manna-KN doesn’t trigger refermentation, which causes alcohol in kombucha (which is naturally up to 2% ABV). By using Manna-KN, you can help guarantee your product stays under 0.5% ABV, and doesn’t go over the legal limit.
To increase my existing equipment’s production capacity by 10x or more: Just a bit of long-fermented Manna-KN packs a flavour punch! This means you can reduce or eliminate the starter in your recipes, which enables you to potentially eliminate the need for hot infusions (and for all the equipment necessary for large-scale infusions).
To reduce my production cycle time: Because your brew won’t require another tea infusion and a secondary fermentation to be ready, you can brew and package in as little as one day!
Because my brewer isn’t comfortable with kombucha fermentation: Many copackers and beer breweries are weary of kombucha contaminating their beer and other products. Using Manna-KN without starter enables you to significantly reduce that risk.
